Halloween 2011

Here is a Birthday cake. Decorated with candy corn and little plastic spiders.



Here is a from scratch carrot cake with cream cheese frosting.




Recipe:

  • 4 Eggs
  • 1 1/2 cups Vegetable Oil
  • 2 cups Sugar
  • 2 cups Flour
  • 1 tsp Salt
  • 1 tsp Baking Soda
  • 1 tsp Cinnamon
  • 3 heaping cups Grated Carrots
  • 1 cup Raisins
  • 2 tsp Vanilla
  • 8 oz. Crushed Pineapple drained

    Preheat oven to 350 degrees. Grease and Flour a pan. Beat eggs and oil with a mixer. Gradually add sugar. In a separate bowl, sift flour, salt, baking soda, and cinnamon. Combine the egg mixture with the flour mixture. Mix for 1 or 2 minutes. Stir in carrots, raisins, vanilla, and pineapple. Mix until blended. Bake for 45 to 55 minutes. Cool.

    Frosting:

  • 8 oz. Cream Cheese
  • 1/2 cup Margarine
  • 4 cups (1 pound) Powder Sugar
  • pinch of Salt
  • 1 1/4 tsp. Vanilla

    Blend cream cheese and margarine with mixer. Add sugar, salt, and vanilla. Mix until well blended.

    Frost cake and refrigerate.

    85th Birthday Cake

    A birthday cake for my Grandmother's 85th birthday. I was going for kid-like theme. The top two tiers are yellow cake with vanilla buttercream icing. The bottom tier was chocolate cake with chocolate buttercream icing. The stars on the top are dyed white chocolate.

    4th of July Cookies & Zebra Cake

    I saw these Hello Kitty and Mickey Mouse cookie cutters at Party City and had to buy them. These cookies were the first I have decorated with royal icing flooding. The flooding didn't work like I expected it too. For small details, I think flooding is the way to go. But if your background is going to be all one color, I still think a glaze is the best.

    Zebra Cake 8-4-2011

    I want a dark chocolate fudge cake, chocolate mousse filling, and chocolate icing. Walnuts on top. I want it to say Happy Birthday, with zebra strips and pink. Whew! What a combination. This is what I came up with.

    Tiered Cakes

    So, this was my first attempt at making a tiered birthday cake. It turned out well. When I got the request for the cake I was totally excited. I was pretty much allowed to decorate it however I wanted. I knew I wanted to do gumpaste daisies but I wasn't sure about color or design.

    My father purchased a bouquet of pink, yellow, and white daisies for my Mom and after I saw them I knew I wanted to mirror those colors for the cake. As for the design and such, it all just kind of came together as I baked and decorated the cake. When I put the last finishing leaves on the cake, I was glad it turned out well.

    Now, for those who have never done a tiered cake, here is what you want to do. On each level that is going to have another cake sitting on top, you want to stick rods in the cake to support the weight of the cake on top. I used cardboard lollypop sticks which I cut down to size. Five total were used, the four corners and one in the middle.

    For the top layer, I cut a cake board to the exact size of the cake and then placed the cake, with the cake board on top of the bottom layer.

    You want to ice both layers before you start stacking your cake. Once you have an iced and stacked cake, you can start putting on the details (like the borders).

I started to make some eatable ones but then realized with real booties, she could have a keepsake and something to use for the baby.

    Frog Cake

    What do you get when you combine a marble cake, coconut-pecan filling, and chocolate frosting? A very brown frog birthday cake. After I was told what type of cake they would like, I asked about design. "Anything frog" was good and since I had this pan I thought it would be perfect. It was a little bit of a challenge to decorate the whole thing in different shades of brown, but it still turned out cute and yummy.
