So, this was my first attempt at making a tiered birthday cake. It turned out well. When I got the request for the cake I was totally excited. I was pretty much allowed to decorate it however I wanted. I knew I wanted to do gumpaste daisies but I wasn't sure about color or design.
My father purchased a bouquet of pink, yellow, and white daisies for my Mom and after I saw them I knew I wanted to mirror those colors for the cake. As for the design and such, it all just kind of came together as I baked and decorated the cake. When I put the last finishing leaves on the cake, I was glad it turned out well.
Now, for those who have never done a tiered cake, here is what you want to do. On each level that is going to have another cake sitting on top, you want to stick rods in the cake to support the weight of the cake on top. I used cardboard lollypop sticks which I cut down to size. Five total were used, the four corners and one in the middle.
For the top layer, I cut a cake board to the exact size of the cake and then placed the cake, with the cake board on top of the bottom layer.
You want to ice both layers before you start stacking your cake. Once you have an iced and stacked cake, you can start putting on the details (like the borders).
